On it’s 4th year, Sa Pantalan – Biyaheng Pangkatagalugan once again showcased the very best of Laguna cuisine, art and crafts last October 12. The annual festival organized and hosted by the Salonga Family of Santa Cruz, Laguna is their way of promoting their province and the unique culture and products available but is often undiscovered. Headed by sibling chefs Day Salonga and Gel Salonga-Datu, Sa Pantalan gathers food purveyors, farmers, skilled craftsmen, and talented artists thru a yearly festival. The Salongas provide a venue and promote the event for free, inviting potential clients, influential chefs, business leaders, and patrons of the arts.
This year, a welcome addition to Sa Pantalan was a mini symposium held throughout the day, on topics ranging from culinary heritage, history, modern farming, food security, and the like. Invited speakers include university professors, social media influencers, and food and cultural experts.The symposium was attended by college students from Laguna and guests of the trade fair, all welcoming the opportunity to learn from experts and institutions in their respected fields.
Of course, food has always been central for the Salongas and during this year’s special lunch for VIP guests, Chefs Day, with Chef Gel, and close friend Chef Gem Tee, prepared a feast entitled “Hapag ng Lawa”. This tasting menu featured unique fish varieties and ingredients found in Laguna de Bay and throughout the province. From kanduli to carp roe, to itik and burnt coconut, Chef Day put the spotlight on Lagunense cuisine in his own creative and tasteful way.
Sa Pantalan – Biyaheng Pangkatagalugan is a prime example of how the private sector can get involved and even spearhead worthwhile causes. It is the Salonga Family’s wish that events like these become more frequent and common in order to encourage small local businesses, especially those making and selling heritage products.
