Chef Nobu Matsuhisa Returns to Nobu At City Of Dreams Manila This October

October 7, 2025 – World-renowned celebrity chef Nobu Matsuhisa is setting the metro’s dining scene abuzz as he returns to Nobu Manila on October 13 and 14 to host a two-night intimate dinner affair at the Nobu Hotel, the local outpost of his global chain of eponymous restaurants and hotels.  

Poised to be another unforgettable Nobu experience for Nobu fans and the metro’s discerning gourmands who need not travel the globe to complete their bucket list of renowned dining experiences, Nobu Manila’s dinner events feature an “Art of Omakase” seven-course dinner menu with sake pairing on October 13, and a Canapé Night on October 14. The curated menus showcase the inventive and the much-acclaimed Nobu Style, infused with Chef Nobu’s trademark “kokoro” (“from the heart”) that are expertly executed by Chef Nobu himself together with visiting Nobu Restaurants Group Corporate Chef Herve Courtot and Nobu Manila Head Sushi Chef Kei Hirukawa. Nobu Restaurants Group APAC Regional Director and General Manager of Nobu Tokyo Ichibaku Kobayashi, joins them in imbibing the Nobu experience.

Some highlights on the Omakase dinner event, which features a live acoustic jazz entertainment are: a Nobu-style Sashimi Selection consisting of Yellowtail Jalapeño, Akami (lean cut of tuna) with dry miso, and Whitefish Tiradito; Lobster and Papaya Salad Dry Miso with yuzu truffle, crispy yuba, red capsicum and parmesan paired with Daiginjo “Black Label; Toro Umami with cilantro and red onion yellow anticucho paired with Junmai Daiginjo “The Sake”; A5 Wagyu Tenderloin with tosazu butter and crispy shiitake mushrooms paired with Sake Special Reserve 28 on the rocks; and Chocolate Truffle with vanilla ice cream paired with Hokusetsu Plum Wine. The menu paired with premium Nobu sake labels is offered at P9,500 net person and comes with a signed Nobu chopsticks gift box and a photo opportunity with the celebrated chef as memento.

The Canapé Night at P5,500 net per person, features a chill and casual dining vibe amid live music from a guest DJ spinning lo-fi Tokyo-inspired lounge beats.  It highlights a luxurious array of various Nobu signatures served canapé style, to be indulged in as passed around and in live stations. The irresistible choices including iconic Nobu dishes, among others, are: Black Cod Butter Lettuce, Rock Shrimp Creamy Spicy, Spicy Tuna Crispy Rice, Yellowtail Jalapeño, Salmon Karashi Su Miso, Kinmedai Yuzu Ponzu, Gallagher Oysters paired with custom Nobu sauces at the Fresh Oyster Bar, assorted Nobu tacos, meat and seafood skewers at the Robatayaki Grill Stations, and various signature desserts such as Miso Cappuccino and homemade mochi. The menu includes not-to-be-missed cocktails unique to Nobu including the Matsuhisa Martini, Mango Passion, Lychee martini and Nobu White Sangria. Guests will have a chance to have a souvenir photo with Chef Nobu.

Chef Nobu Matsuhisa’s renown is recognized at the Golden Globes where he was Official Chef in 2024 and 2025 at the glamorous celebrity-studded event. He was awarded the Order of the Rising Sun, Gold, and Silver Rays by the Japanese emperor in 2024, and was accorded the Lifetime Achievement Award by GQ in 2017.
