Honoring Family Traditions with Chef’s Table at Brasserie on 3

A celebration of the Filipino family’s enduring bond and the cherished tradition of gathering around the table, Brasserie on 3 presents Filipinas, a multi-course tasting menu thoughtfully created by seven female chefs.

Each course draws inspiration from treasured family recipes, influential home cooks, and culinary memories lovingly passed down through generations. Reflecting the warmth, care, and connection that define Filipino family life, the menu showcases regionally inspired dishes such as etag na tokwa’t baboy (tofu skin, etag, coconut vinegar, soy gel), tuna kilawin (batwan, labuyo, niyog, suha, puffed sorghum), Maya Maya at Alugbati (goji berry agrodolce, black heirloom rice, chicken tinapa), and baka, gata, laing (beef tenderloin, burnt coconut, creamed taro leaves, labuyo pearl), among others.

Paying homage to the women, traditions, and shared meals that shape Filipino households, Filipinas offers a dining journey that is unmistakably Filipino, deeply rooted in heritage while thoughtfully reimagined for the contemporary palate.
